Alimentar para a Popula\u00e7\u00e3o Brasileira<\/a><i>,<\/i>\u00a0do Minist\u00e9rio da Sa\u00fade, acabou de passar por uma atualiza\u00e7\u00e3o que ser\u00e1 discutida numa\u00a0live\u00a0com engenheiros de alimentos, incluindo tr\u00eas docentes da Faculdade de Zootecnia e Engenharia de Alimentos (FZEA) da USP em Pirassununga. A ideia \u00e9 abrir o debate para a popula\u00e7\u00e3o como uma forma de conhecer as atividades do engenheiro de alimentos e a pertin\u00eancia dessa atualiza\u00e7\u00e3o.<\/p>\n<p>Com a atualiza\u00e7\u00e3o do guia, o sistema de classifica\u00e7\u00e3o de alimentos NOVA prop\u00f5e a divis\u00e3o dos alimentos em quatro categorias: 1) Alimentos\u00a0<i>in natura\u00a0<\/i>ou minimamente processados, 2) Ingredientes culin\u00e1rios processados, 3) Alimentos processados e 4) Alimentos \u201cultraprocessados\u201d.\u00a0O professor Marco Antonio Trindade, da FZEA, diz que \u201ca terminologia adotada nessa nova classifica\u00e7\u00e3o de alimentos n\u00e3o levou em considera\u00e7\u00e3o a terminologia oficial utilizada pela ci\u00eancia e tecnologia de alimentos.\u201d<\/p>\n<p>Segundo a professora Alessandra Lopes, \u201cesta\u00a0live\u00a0vem com o objetivo de esclarecer que a terminologia do estudo dos processos de fabrica\u00e7\u00e3o de alimentos ficou esquecida quando surgiram tais defini\u00e7\u00f5es e agora \u00e9 dever do profissional da \u00e1rea informar sobre os processos envolvidos na manufatura de alimentos\u201d. Isso, adianta a professora, porque o\u00a0objetivo do guia \u00e9 apoiar e incentivar a promo\u00e7\u00e3o da sa\u00fade e de pr\u00e1ticas alimentares saud\u00e1veis e sustent\u00e1veis no \u00e2mbito individual e coletivo. O documento apresenta de forma simples e did\u00e1tica o que as pessoas precisam fazer para ter uma alimenta\u00e7\u00e3o saud\u00e1vel e adequada e est\u00e1 acess\u00edvel para qualquer pessoa no portal do Minist\u00e9rio da Sa\u00fade.\u00a0A \u00faltima vers\u00e3o do guia foi lan\u00e7ada em 2014 e \u00e9 atualizada constantemente.<\/p>\n<p>Para o professor Rodrigo Petrus, tamb\u00e9m da FZEA, a maioria da popula\u00e7\u00e3o brasileira desconhece a profiss\u00e3o de engenheiro de alimentos, apesar de ser exercida h\u00e1 mais de 50 anos no Brasil. \u201cH\u00e1 uma lacuna pelo desconhecimento da profiss\u00e3o que acaba sendo preenchida por nutricionistas, m\u00e9dicos,\u00a0 nutr\u00f3logos, epidemiologistas, que n\u00e3o t\u00eam obviamente conhecimento acerca do processamento de alimentos, por isso o guia traz a nova terminologia com equ\u00edvocos\u201d, afirma.<\/p>\n<p>Al\u00e9m dos tr\u00eas docentes da FZEA, participam da\u00a0live<i>\u00a0<\/i>a vice-presidente da Associa\u00e7\u00e3o Brasileira dos Engenheiros de Alimentos (Abea-SP), Renata Fantaccini, e a engenheira de alimentos do Conselho Regional de Engenharia e Agronomia (Crea-SP), Claudia Paschoaleti.
